When I plug headphones in to the speaker does it mute the speakers?
Yes!!!
And it allows you to say goodbye to plugging the earphones into the bulky case, causing the problem that the earphone cable is not long enough.
Does the speaker come with a power adapter or is it just plugged into the usb and speaker ports?
Hello there! The speaker does not include a power adapter, it has a USB power cord and a 3.5mm stereo audio cable. If you need to connect to other power sources, you can use a 5V/1A USB power adapter.
Can I plug these speaker in a headphone jack for a car tv?
I would say yes, as long as you have the USB jack and a plug like you would for a PC. I have mine plugged right into my PC, USB and earphone jack.
When you have headphones jacked in, are you able to adjust the volume with the knob?

How long are your speaker cords?
The length between the left and right computer speakers is 31.49in (80cm) and the USB cable, Aux cable are 39.37in (100cm).
